Recipe Sablès Shortbread Biscuits

250 grams of flour 00,150 grams of butter, 120 grams of icing sugar, 1 whole egg, 1 pinch of salt, 1 vanilla bean or 1 sachet of vanillin, grated lemon rind


Let's start by adding a pinch of salt to the icing sugar and adding the vanillin. In another bowl, we break 1 egg and beat it. Then in the planetary mixer, insert the cold flour and butter and operate at moderate speed. When it starts to sandblast, we then add the rest of the powders and the egg and let the planetary machine work slightly increasing the speed. Let it go until the pastry is ready and compact. Once it has reached the right consistency, compact it slightly and bring it to the fridge for at least 3 hours, covered with transparent film. After the necessary time, we leave 10 minutes out of the fridge and then roll out the dough with the rolling pin of the thickness we prefer. We then create the biscuits in the way we like best and bake at 180 degrees for about 20 minutes.
