Recipe Pumpkin And Broccoli Cream

ingredients:

500 grams of pumpkin, 300 grams of broccoli, 1 potato, 1 onion, 4 tablespoons of extra virgin olive oil, half a glass of white wine, 1 clove of garlic, white sesame as required, salt to taste





Recipe:

Heat some oil in a saucepan. In the meantime, finely slice an onion and add it to the casserole with the oil making it simmer. Then proceed to the preparation of the pumpkin. Clean it and cut it into small cubes. Add it to the casserole with the stewed onion. Peel the potato and cut it into cubes, then add it to the casserole. Add salt and water, bringing it almost to the level. Cover and cook for 20-25 minutes. Meanwhile, prepare the broccoli. Separate the tops from the woody side and cook the steam tops for a maximum of 5 minutes, then remove them from the heat. Heat some oil in a pan and add a clove of unpeeled garlic, then add the broccoli and salt. Meanwhile, toast the white celery in another pan. Blend the broccoli with the white wine and turn off the heat as soon as the alcohol has evaporated. Blend the potato and pumpkin soup and pour it into a serving dish. Add the sautéed broccoli and decorate with toasted sesame and a round of oil.
