Recipe Gnocchi With Sausage And Mushrooms

ingredients:

Extra-virgin olive oil, 1 shallot, 400 grams of sausage paste, 40 grams of dried mushrooms, 1/2 glass of white wine, 2 bay leaves, 80 grams of tomato paste, 180 grams of flour, 600 grams of boiled potatoes, 1 egg, 1 pinch of salt, parsley





Recipe:

Let's start preparing the gnocchi: boil the potatoes without the skin, then squash them and add the salt, flour and egg. We knead well and then create strips from which we will make our gnocchi. Let's put them aside and prepare the sauce. Put some oil in a saucepan and add the minced shallot and let it dry. Then add the sausage paste and the previously soaked and then cut mushrooms. We put the wine and let it evaporate and then add the bay leaf and the tomato paste, soak the water in the mushrooms, stir and cook for about 10-15 minutes. Meanwhile lower the dumplings in plenty of salted water and once they are ready, drain them in our sauté, which will be ready in the meantime. We sauté everything, add the chopped parsley and serve. Enjoy your meal!
