Recipe Pasta And Potatoes With Mussels

ingredients:

300 gr of ditaloni, 600 gr of potatoes, 500 gr of mussels, 2 tablespoons of pureed peeled tomatoes, 4 cloves of garlic, 1 sprig of parsley, 6 tablespoons of extra virgin olive oil, 1 red pepper (optional)





Recipe:

Let's start by putting some oil in the pan and let it heat together with the garlic and the parsley stems. Before it fry, let's put the mussels in, making sure we have first removed the wire that protrudes and cleaned the shell with a net. We cover the pot and wait 2 minutes, just long enough to open them. Later we warm up and shell them. Pass them in a bowl and filter the cooking broth on top. Chop garlic and parsley and put 2-3 tablespoons of oil in a high casserole, remove the pepper seeds, always if we taste it and put everything in the oil to heat up. Then cut the potatoes into cubes and add them to the mixture, let them cook for a few minutes and then add the tomato and almost all the liquid from the mussels. Cook for about 10 minutes on medium-low heat. Add enough hot water and bring to a boil. As soon as it boils, toss the pasta and turn off the stove 3-4 before the pasta is cooked. Add the mussels and let them rest with the lid on for at least 5 minutes, then serve and enjoy. Enjoy your meal!
