Recipe Eggs And Cheese Tubes

ingredients:

400 grams of tubes, 100 grams of lard, 3 eggs, 30 grams of grated pecorino, 30 grams of grated Parmesan, 1 onion, salt and pepper to taste





Recipe:

Put the lard in a pan and light the fire. While the lard melts, chop the onion and add it to the pan with the lard. Simmer the onion gently for at least ten minutes over low heat. At this point, add a pot of boiling water and add the pasta, which must be drained a minute beforehand. Turn off the pan fire. In a bowl, beat the eggs with the pecorino, parmesan, salt and pepper. Before draining the pasta, add a ladle of the cooking water to the egg and cheese mixture. Drain the pasta directly into the pan with the caramelized onion and lard, mix and add the egg custard. Stir until the egg is firm and serve hot.
