For the salad: 500 grams of potatoes, 200 grams of carrots, 300 grams of peas, 2 hard-boiled eggs, salt, pepper, 30 grams of extra virgin olive oil, 10 grams of apple vinegar. For the mayonnaise: 2 egg yolks, salt, pepper, 3 grams of vinegar, 200 gr of seed oil, 25 grams of lemon juice
Start by washing and peeling the potatoes and carrots and then cut them into cubes. I steam the vegetables starting with peas and then add the potatoes and carrots after a few minutes. Then I also cut the hard-boiled eggs and once the vegetables are ready, put them in a bowl and season with salt, pepper, extra virgin olive oil and apple cider vinegar or, if we don't taste it, white wine vinegar. Meanwhile I go to prepare the mayonnaise: in a large bowl put 2 egg yolks, salt, pepper, vinegar and operate the electric mixer. Then start adding the seed oil slowly and once the mayonnaise is ready, add it to the vegetables, mix well and bring it all to rest in the fridge for an hour or so. Enjoy your meal!
