2 eggs, 50 gr of sugar, 1 grated lemon, 50 ml of water, 380 gr of mascarpone, 1 packet of baking powder, 150 gr of 00 flour, sunflower oil, 60 gr of icing sugar
We start by putting in a bowl the eggs, the sugar, the lemon rind, the water and mix everything with a whisk. After we add 130 grams of mascarpone and mix again, the yeast, and the flour that we will gradually incorporate. Once the dough is created, cover it with plastic wrap and let it rise in the heat for 30 minutes. After the leavening time, using 2 tablespoons, we take some dough and put it to fry in hot oil. Once all the pancakes are ready, mix them on absorbent paper in order to remove excess oil and in the meantime prepare the filling. Let's take 250 grams of mascarpone, add it to the icing sugar and turn on the electric blender. Then take a syringe for sweets and fill all our pancakes!
