Recipe Bread Dumplings With Mussels And Cherry Tomatoes

ingredients:

For the gnocchi: 200 grams of breadcrumbs, 150 grams of milk, 2 eggs, 50 grams of flour, 100 grams of pecorino, white pepper as required. For the sauce: 800 grams of mussels, 300 grams of cherry tomatoes, 1 clove of garlic, parsley to taste, salt to taste.





Recipe:

Starting with the preparation of gnocchi. In a large bowl, pour the breadcrumbs, cheese and sifted flour. Mix. In another bowl beat the eggs with the milk. Once mixed, pour the liquid ingredients into the bowl containing the usual ones. Salt and pepper. Knead until dough is well blended, then cover and rest for about 15 minutes. After letting the dough rest, knead the dough to obtain the dumplings, moistening your hands when necessary. Switch to the sauce now. Heat some oil in a pan and add 2 cloves of poached garlic. Cut the tomatoes and add them to very hot oil. Salt. In the meantime pour some oil and a clove of garlic in a shirt in another pan and add the parsley. Heat up and then add the mussels. Cover and wait for the mussels to open. Once opened, turn off the heat, shell them and filter the cooking water. Add part of the water to the mussels and then transfer everything to the tomato sauce removing the garlic. Boil water in a saucepan, salt lightly and pour in the gnocchi. When they rise to the surface, drain them directly into the sauce pan. Chop the parsley and add it to the pan. Serve hot.
