Ricotta, 3-4 slices of spicy gorgonzola, 1 tablespoon of mascarpone, asiago, grated parmesan, 10 egg yolks, 00 flour, durum wheat flour, 1 thick slice of cooked ham (about 150 gr), walnuts, butter
Let's start by putting ricotta, parmesan, gorgonzola and mascarpone in a bowl. Mix well and let them blend properly. Then we take the dough we have prepared with 70% flour 00,30% of durum wheat flour and 10 egg yolks and roll it out first with a rolling pin and then let us help ourselves with the pasta machine. Once the dough is obtained, divide it and with a pastry cutter or a simple glass, we go to cut out circles. Then fill them one by one with the cheese mixture we prepared earlier and close them in a bundle, helping us to seal them with a fork. Cut the cooked ham into small cubes and put plenty of butter in a pot where we will throw the ham and then the coarsely chopped walnuts. We put a dash of oil in the water that we have salted and put to boil to immerse our ravioli that will be cooked in a few minutes. Drain and pass them in the pan where we put the ham and walnuts, sauté lightly and serve. To complete the dish, grate some asiago on the ravioli and serve. Enjoy your meal!
