Recipe Spaghetti Frittata

Doses for: 6 persone

ingredients:

350 grams of spaghetti, 5 eggs, 100 grams of whole milk, 50 grams of Parmigiano Reggiano DOP to be grated, 100 grams of smoked scamorza, 50 grams of smoked pancetta, 1 sprig of thyme, 1 pinch of black pepper, extra virgin olive oil d 'olive enough, 1 clove of garlic.





Recipe:

To make the spaghetti omelette we start cooking the pasta, in this case spaghetti, in boiling salted water. Meanwhile the pasta is cooked we can cut the smoked cheese into small cubes which we then leave aside in a small bowl. Now let's cut into strips the smoked pancetta already deprived of the rind. Drain the spaghetti and pour them in a large bowl, add a little oil, mix and leave to warm. At this point in another bowl we break the eggs, add the peeled thyme, the milk, the grated cheese and then salt and pepper to taste. We mix well to obtain a homogeneous mixture, then we also add the scamorza and pancetta and continue to stir again. Finally we also combine the pasta and mix well. Put a pan on the stove, add a little oil, a clove of crushed garlic and let it brown. When the bottom of the pan is hot, remove the clove of garlic and pour the spaghetti. Distribute them evenly with a spatula, then over high heat for 1 minute we firm up the base, then lower the heat, cover with the lid and cook for 15 minutes. After the right time, turn the omelette: place a dish of the same diameter on the pan, pour the pan over and once the omelette is removed, put it back in the pan turned over on the other side and cook for another 5 minutes without a lid. The omelette is ready!
