We start by placing the 4 eggs at room temperature and a pinch of salt in a bowl and turn on the electric mixer. Immediately after we add the sugar little by little and beat again. Then we combine the yeast with the flour and add it through a sieve. We mix so that everything is incorporated well and we put it aside. In a saucepan heat the milk with the butter and once ready, add it to the mixture that we had set aside, grate the lemon rind and give another mix. Pour into a 20 cm buttered and floured mold and bake at 180 degrees for 35 minutes. Our cake is ready! We can decide to leave it like this or sprinkle on a little icing sugar!
