Recipe Rustic Baba

For the dough: 600 grams of flour, 5 eggs, 25 grams of brewer's yeast. 1 teaspoon of sugar, salt, pepper, extra virgin olive oil, 1 glass of milk. For the filling: cured meats and hard pasta.


To start, we slice and cut into cubes all the cold cuts and cheeses we have decided to use and keep them aside. Subsequently we dissolve the yeast in the warm milk and then pour the flour into a large bowl and begin to add the warm milk in which we have dissolved the yeast and mix gently with your hands. Then add the sugar, a pinch of salt and pepper and the eggs, one at a time and gradually incorporate everything. Put a little oil and mix well until you get a smooth and elastic mixture. Then add the cheeses and cured meats one by one as we continue to knead. Once all the ingredients have been added, we oil the mold we are going to use and then transfer the mixture inside. Cover with a cloth and let it rise in the oven with the light on, for about 1 hour. Once the dough is doubled we can bake for about 40 minutes at 180/200 degrees without having to preheat the oven. After the cooking time, our rustic baba is ready to taste!
