Recipe Medlar Tart

ingredients:

300 grams of whole wheat flour possibly stone-ground, 150 grams of butter, 60 grams of chestnut honey, 2 egg yolks, 250 grams of medlar jam.





Recipe:

To prepare the medlar tart, start with the pastry: combine the whole wheat flour, the butter cut into pieces, the honey, the pinch of salt and the egg yolks on the work surface. Work the ingredients with your fingertips until you get a crumbled mixture, then knead until you get a smooth dough. Transfer the pastry mixture onto a sheet of parchment paper and spread it slightly, then cover it with other parchment paper and put it in the fridge for at least half an hour. When you resume the pastry from the refrigerator you will notice that it has hardened, take the opportunity to spread it a little more, then use it to line a mold, possibly with the removable, already buttered bottom. Remove the surplus of shortcrust pastry and set aside to subsequently make the strips for decoration. Prick the bottom of the pastry with a fork. Take the medlar jam and distribute it evenly on the bottom. Complete it by decorating it with shortcrust strips made with a notched wheel for a more refined result, otherwise the classic knife for smooth strips is fine. Bake, finally at 180 ° C, static oven, for about 30 minutes. Check that the shortcrust pastry is lightly browned and that it is toasted. Remove the tart from the oven, let it rest for about ten minutes before removing it from the mold. Serve the cold tart!
