Recipe Chocolate Salami

Doses for: 8 persone
realization time: 30 minutes

ingredients:

Dark chocolate 200 grams, dry biscuits 175 grams, butter at room temperature 150 grams, sugar 150 grams, eggs at room temperature 100 grams (2 medium eggs), rum 10 grams, icing sugar (to dust) as required

Recipe:

To make the chocolate salami, first chop the chocolate with a knife. Melt it in a bain-marie and, once it is completely melted, let it cool. Meanwhile, place the butter in small pieces at room temperature in a bowl (it must still be plastic) and whip it with the sugar using electric whisk. Flavored with rum. Pour the lightly beaten eggs one at a time, continuing to beat with the electric whisk until the mixture is light and fluffy. At this point pour the melted chocolate at room temperature by now. Continue stirring until the chocolate is well incorporated. Now take the biscuits and chop them coarsely in a bowl with your hands, add them to the chocolate and mix to mix the mixture. Transfer the dough onto a sheet of baking paper, distribute the dough with the spatula so as to create a sausage. Lift one of the two ends of the sheet, bring it towards the center and roll the salami up to wrap it completely with the baking paper. Fold the two side edges of the paper so that the salami is tightly closed. Place the salami on a tray and leave it in the fridge to harden for a whole night. Once the chocolate salami has become firm, you can tie it with string and sprinkle it with icing sugar.
