Recipe Quinoa With Vegetables

ingredients:

70 g of red peppers, 70 g of yellow peppers, 100 g of red onions, 150 g of courgettes, 100 g of champignon mushrooms, 200 g of quinoa, 400 g of water, salt, pepper, extra virgin olive oil, fresh mint





Recipe:

Let's start by chopping the red onion. We heat a little oil in a non-stick pan and let the onion stew, adding some water whenever needed. Then cut the peppers into strips and add them to the onion. We cut the courgette and the mushrooms in the same way, and we also combine those. Season with salt and pepper and let go for 5 minutes. Rinse the quinoa well and let it toast in a saucepan with a little oil. Let us climb and cover it with twice its water volume. We will realize that it will be ready when the seeds open to flower. Once the quinoa is cooked, drain it and add it to the other ingredients. Let's sprinkle with mint to finish and serve! Enjoy your meal!
