Recipe Orange And Fennel Salad

ingredients:

2 fennels, 2 large oranges, 2 tablespoons of black olives, 1 onion, 1 tablespoon of orange juice, 2 tablespoons of lemon juice, 4 tablespoons of extra virgin olive oil, fresh mint and salt to taste.





Recipe:

If we want to prepare this mixed salad with oranges and fennel, take the onion, cut it as finely as possible, transfer it into a bowl filled with very cold water and leave it for a while. Now take the fennels, cut them in half, remove the harder central part, the more fibrous outer part and cut them finely. Take the oranges, remove the upper and lower caps and put them aside. We place the orange on one of the two newly created bases and cut the peel with the knife trying to follow the shape of the citrus fruit. At this point we obtain the orange segments by cutting them off or without cuticles and put them aside. Combine the fennel, orange wedges and onion in a large bowl. At this point we prepare the dressing of the salad: in a bowl we combine the oil, a few drops of orange juice that we extract by squeezing the shells put aside, the lemon juice and the salt. We emulsify the ingredients by beating them with a fork. Then add the mint leaves in the fennel, the vinaigrette and mix everything together. Add two tablespoons of black olives and mix again. Our salad is ready!
