Recipe Russian Salad

Doses for: 4 persone

ingredients:

For mayonnaise: 2 eggs, 80 milliliters of seed oil, salt as needed, pepper to taste, lemon to taste, mustard to taste. For the salad: 3 potatoes, 160 grams of tuna, 2 carrots, 200 grams of peas, 200 grams of green beans, salt to taste. To decorate: hard boiled eggs, olives to taste.





Recipe:

Remove the two ends of the carrots, peel them and cut them into cubes. Peel the potatoes and boil them in boiling water. Clean the green beans by removing the tips and cut them so that they are all about the same size. Shell the peas if fresh. Bring a pot of water to a boil, add salt and toss the carrots. Drain the potatoes if cooked. Drain the carrots with a ladle, leaving the water in the pots and put them in a bowl full of water and ice to speed up the cooling process. Crush the potatoes. Blanch the beans in boiling water, meanwhile put the eggs in cold water and cook them for about 10 minutes until they become firm. Proceed now to the preparation of mayonnaise. In a tall container, pour all the ingredients and blend until the desired consistency is obtained. Now add the peas in the pan containing the green beans and let them simmer for about 5 minutes. Add the tuna to the previously crushed potatoes and add a little mayonnaise to soften them. Drain the green beans and peas and put them in the cold water with the carrots. Slowly add the whole mayonnaise, setting aside enough to decorate. Combine the vegetables (carrots, peas and green beans). Drain the boiled eggs and peel them. Pour the salad into a serving container and finish with a layer of mayonnaise. Decorate with sliced boiled eggs and olives.
