Recipe Chocolate Mousse Cake

ingredients:

For the cocoa biscuit dough: 2 room temperature eggs, 60 grams of granulated sugar, 40 grams of flour 00.15 grams of bitter cocoa, 1 teaspoon of vanilla extract or flavoring to taste, 1 pinch of salt, 1/2 teaspoon baking powder satin (optional). For the mousse: 300 ml of fresh cream, 320 gr of 50% dark chocolate, 225 ml of whipped cream. For the coffee syrup: 100 ml of water, 50 ml of coffee, 1 teaspoon of granulated sugar.





Recipe:

In a bowl we put 2 egg yolks, granulated sugar and frulliamo. In another bowl we put instead the advanced egg whites and whip them up. Add them to the mixture with a pastry spatula and mix. After we combine the flour, cocoa and yeast and mix every time we incorporate an ingredient. We take our hinged mold and pour it all over it then leveling it all over the bottom. Bake 10 minutes at 180 degrees in a static oven. In the meantime, take the dark chocolate, reduce it to flakes and add the fresh cream that we warmed a little earlier, mix and set aside. In another container, whip the cream and then add it to the chocolate mixture. We put baking paper on the plate or tray where we want the finished cake to remain and we insert our cookie dough into the hinge of the mold. With a spoon, moisten the biscuit dough with the coffee syrup and pour the chocolate and cream cream, making it become flat through the spatula. We put in the fridge for about 6 hours and then we take out and dust the whole cake with bitter cocoa. We decorate the center with chocolate chips and serve.
