6 zucchini, 1 glass of whole milk, mint and salt to taste
To prepare the cream of zucchini let's start with the courgettes: we wash them and then cut them into pieces. Put the freshly cut zucchini in a high casserole, cover with water and adjust with enough salt. Boil everything with the lid closed for about 15 minutes or until the courgettes are well cooked. We reduce the soup in cream with the help of an immersion blender. Once everything is blended, add a glass of milk, adjust the salt again and give another smoothie. We serve the warm or warm cream with toast to taste, decorating with a mint leaf.
