Recipe Unique Dish Of Autumn

1/2 pumpkin, 1 potato, 200 g of veal rind, pine nuts, oil, salt, pepper, broth, balsamic vinegar, honey, aromatic herbs, garlic, wine


We start by cutting the pumpkin into thick slices, putting it in a pan and passing a little oil. We bake it at 160 degrees for 35 minutes covered with aluminum foil. Meanwhile, put the potato in cold water and bring it to a boil; about 25 minutes will pass, we can do the cooking test by piercing a fork to see if it comes in easily or not. We then deal with the veal rump, cut it into cubes of about 2 cm per side and brown them for 10 minutes in a pan with oil, salt and pepper, wetting them from time to time with the broth. Toast the pine nuts apart for a few minutes. Then remove the veal cubes from the pan and put them aside covered in a warm place. In the pan where we cooked the veal, we then put 1 tablespoon of honey 1 of balsamic vinegar, reducing everything to a cream and being careful not to let it burn. Let's take care of the potato pie: crush the potato and add the oil, the chopped herbs together with a clove of garlic. With the help of a pastry cutter we try to form a pie in the pan where the potato will be cooked to form the crust. Turn it on the other side and pour on a spoonful of wine. Good! Everything should be ready! We take out the pumpkin and bake it together with the potato and veal pie. Add the toasted sauce and pine nuts and enjoy!
