500 grams of pork loin (thin slices), 100 grams of speck, 200 grams of scamorza (or sliced provola), 1 egg (medium), 80 grams of breadcrumbs, 60 grams of flour 0.30 grams grana padano (grated ), 2 sprigs of marjoram, extra virgin olive oil and salt to taste.
Let's start this dish with the meat slices flattened with the meat tenderizer. Meanwhile preheat the oven to 190 degrees. At this point, place a slice of speck and one or two slices of smoked cheese on each slice of loin; gently roll the meat and form some rolls. Take a baking dish and grease it with a little oil. Then in a bowl we beat an egg with a pinch of salt, while in another bowl we mix the breadcrumbs with the grated Grana Padano cheese which will be used to make breading. At this point we quickly pass the rolls first in the flour, then in the egg and immediately after in the mixture of breadcrumbs and cheese and place them next to each other in the oiled pan. Pour over a little oil and crumble the sprigs of marjoram. We cook the rolls in the hot oven in static mode for about 18-20 minutes. Once cooked they are ready to be served while still hot!
