Recipe Chickpea, Tomato And Olive Salad

ingredients:

500 grams of cooked chickpeas, 500 grams of cherry tomatoes, 100 grams of black olives, 4 tablespoons of extra virgin olive oil, basil, parsley, salt.





Recipe:

We start cooking the chickpeas preferably with us with rosemary and garlic, alternatively those already cooked are fine too. Drain them, remove the sprigs of rosemary and the garlic and put them in a bowl. Cut the tomatoes in half or in 4 depending on how we prefer them. Prepare the seasoning: frulliamo a part of the olives with some oil, adding a pinch of salt. A kind of pesto will come out of it. So let's pour it into the chickpea salad and add a couple of tablespoons of black olives, a few basil leaves and a little fresh parsley. The salad is ready! We can serve and taste like this or we can enrich it to taste! A tip is to add feta or mozzarella that go very well with the other ingredients. Enjoy your meal!
