700 gr of peas, 50 gr of pancetta, 60 gr of new onions, 400 ml of vegetable broth, 50 gr of cooking cream, olive oil, salt and pepper to taste
Let's start preparing this dish by chopping up the onions. We put them to brown in a pan with oil, turning to keep them from burning. Then pour the peas and, turning, cook for a few minutes. Then add the vegetable stock and salt and let it simmer for about 20 minutes. Meanwhile, in a non-stick pan, put the bacon and cook it until it becomes crunchy and let it dry in a dish on kitchen paper. Once the peas are cooked, we mix them with an immersion blender until you get a cream. Then add the cream and mix well. Serve the pea cream and place a slice of bacon on top. We serve the very warm velvet.
