Recipe Tagliatelle With Porcini Mushrooms

Doses for: 4 persone
realization time: 20 minutes


500 grams of clean mushrooms, 300 grams of fresh noodles, 2 cloves of garlic, parsley, olive oil, salt and pepper to taste


To start this dish we have to work the porcini mushrooms. The first thing that needs to be done is to cut the mushroom along: if the walls are clear and smooth it is all right, if instead we see small holes worms are present and therefore at least these parts must be eliminated or even the fungus thrown away. So they must be cleaned from the earth that will be there above all on the chapel and at the bottom of the stem, so we use a scratching knife. Then we wash them carefully, perhaps with the help of a toothbrush. This operation must be done just before cooking. Then put a little extra virgin olive oil and a couple of cloves of garlic in a pan and brown it, then remove it, then cut the porcini into slices. Add salt and pepper and turn. We lower the fire and cover. Cook for about 10/12 minutes so that the mushrooms dry and add parsley. Now add a ladle of pasta water. While the mushrooms finish cooking, we can cook fresh tagliatelle or pappardelle. Then sauté the tagliatelle with mushrooms in a pan, a little bit of preezzemolo and the dish is ready
