This Level 1 cooking course is designed for those wishing to take their first steps into the world of food and wine. It focuses on approaching raw ingredients, understanding them, and mastering the basic techniques needed to use them in recipes. The program spans eight lessons, each providing students with technical culinary foundations—such as knife skills, cooking methods, and terminology—alongside educational insights into sensory characteristics and product knowledge, drawing a direct comparison between traditional and modern dishes. We will begin by learning to identify ingredients, master vegetable cuts, and prepare sauces, stocks, and both fresh and dried pasta. We will then move on to lessons covering fish, the preparation of white and red meats, various cooking methods and ideal temperatures, eggs, and finally, the basics of pastry making. For every technique mastered, we will prepare recipes designed to be recreated at home using a variety of ingredients. Under the expert guidance of our chef, *we* will be the stars of the show! The course balances theory with hands-on practice, allowing us to create delicious dishes by getting directly involved in the cooking process. Each student will receive an apron to wear during the class, and the following day, we will email the complete recipes—including all ingredients and step-by-step instructions—so you can recreate the dishes at home whenever you like.
