Recipe Sacher Cake

ingredients:

125 grams of dark chocolate, 10 grams of honey, 100 grams of icing sugar, 125 grams of soft butter, 115 grams of egg yolks (about 7), 110 grams of sugar, 6 egg whites, 125 grams of 00 flour, apricot jam , To garnish: 200 grams of dark chocolate, 200 grams of liquid cream, 20 grams of butter.





Recipe:

We start by melting the dark chocolate and letting it cool. Then in another bowl, put the icing sugar, the softened butter, the honey and turn on the electric mixer. We immediately add the melted chocolate and the yolks that we will incorporate 1-2 at a time. Then whisk the egg whites and sugar in a separate bowl and add it to the chocolate mixture in 2 strokes, stirring gently with a pastry spatula. We then incorporate the flour, sifted and a little at a time, and then bring it all into a 20 cm mold. Bake at 180 degrees for 45 minutes in a static oven and once the base is ready, remove the top and cut into 3 layers. On each layer we put apricot jam and overlap them. We bring in the freezer for 1 hour and in the meantime prepare the sauce for garnish. Dissolve the dark chocolate and then add the hot liquid cream, mix very well and add the pieces of butter. Once the rest time is over, we pull our cake out of the freezer and pour in our chocolate sauce by letting it drain so that it dries evenly. With a pastry bag we write Sacher on the cake and once the chocolate has hardened, we taste!
