We start by peeling and chopping the onion. Put the butter in a saucepan and while it is melting add the chopped onion. Dice the speck fat and let it brown together with the onion. Chop carrot and celery and add them to the pot with a sprig of thyme. Peel the potato and cut it into small pieces and then add it to the other ingredients. Add the barley, mix everything and then put several ladles of broth until it is completely covered. While it is boiling, add the diced speck and cook for another 30 minutes.
