Recipe Spek Gnocchi And Nuts

INGREDIENTS FOR GNOCCHI Potatoes with yellow paste 1 kg, Flour 00 300 g, Eggs 1, Salt to taste enough FOR SEASONING Speck 200 g, Walnut kernels 60 g, Taleggio 240 g, Liquid fresh cream 150 g, Nutmeg 1 pinch , Rosemary as needed, salt to taste, black pepper to taste





Recipe:

For the preparation of potato gnocchi, boil the potatoes for about 30-40 minutes from boiling. The cooking time will vary, depending on their size. Peel them while still hot and then crush them on the flour you have poured onto the pastry board. Add the egg and a pinch of salt and knead with your hands until you get a soft but firm dough. Take a piece of dough and roll it out with your fingertips to make 2 cm thick loaves; help yourself by flourishing the pastry board from time to time with semolina. Cut some pieces and drag them onto the string to get the typical shape. As you form the potato gnocchi, place them on a tray lined with a lightly floured cloth, well spaced from one another. Take care of the dressing now: cut the taleggio into slices, chop the rosemary needles and set them aside. Pour the fresh cream into a large saucepan, season with the nutmeg, add the taleggio cheese to the cream and let it melt on low heat, helping with a whisk. As soon as the taleggio is melted, let it thicken on the fire just enough so that the sauce is not too liquid, then remove it from the heat. Cut the speck into medium slices, reduce it into strips and cut it into cubes. Toast the speck with the chopped rosemary and sauté until crispy, so keep it aside. Coarsely chop the walnuts and toast them in the same pan of the speck so they will absorb the aroma. Cook the gnocchi in boiling salted water and, as soon as they come to the surface, drain them in the pan with the taleggio sauce. If necessary, add a ladle of gnocchi cooking water and mix everything on a low flame. Also add the speck and walnuts, season with salt only if necessary and flavor with black pepper. Serve your steaming dumplings and enjoy your meal!
